Georgian sauce "Bazhe"

Glory to Georgia and the great Georgian people, who gave the world the incomparable dishes of Georgian cuisine!

And now let's talk not about the US Georgia but about small Сauсazus country between the Turkey and Russia, which people have been able to maintain their unique culture and, in particular, rich and healthy cuisine. And one of the best sauces, you can imagine - the Plum sauce "Tkemali" and the Walnut sauce "Bazhe"! 

This weekend GreenPro team has chosen the fish for grilling. Of course, we decided to grill it with a new sauce. Recently when we were in Georgia, we discovered one of the most popular sauces in Georgia - bazhe, and, trust us, it was very, very tasty.

And we highly recommend you to taste this sauce for your grill or barbeque with a fish or chicken. It is also perfect with meat.

 

Ingredients

  • a bottle of Georgian dry white wine – not for the sauce.
  • walnuts - 400 g 
  • Garlic - 3-4 cloves
  • Water boiled - 50 ml
  • Pomegranate juice - 20 ml
  • Fresh coriander  - 1 teaspoon
  • Dried coriander - 1 teaspoon
  • Dried red pepper - 1 teaspoon
  • Saffron  - 1 teaspoon
  • Salt - to taste

 

How to cook it

  1. Georgian wine has a specific taste. Drink 50 grammes of wine and start making the sauce.
  2. Grind the walnuts (you can use a blender or a meat grinder) and crush the garlic separately.
  3. The next step is the most difficult: you need to rub, minced nuts, pressing them on the back of a spoon to extract walnut oil.
  4. Add the chopped garlic, spices and salt to a bowl with the walnuts.
  5. Pour 50 ml of a cooled boiled water to a bowl and mix, then mash with a fork.
  6. Add pomegranate juice and continue to add water, without ceasing to stir, and grind until the sauce will look like a rather thin cream.

 

Despite its simplicity, this sauce "Bazhe" would quickly become one of your favourites one! It is so fragrant and delicious! You can add this sauce to whatever you want: meat, poultry, fish; and for vegetarians, it is an ideal complement to vegetable dishes!
